I agree. We harvest and use absoluely every bit of meat we can. Neck roast is the best for stew. I have the hides tanned and will use for chairs, gloves, etc.
Hudson's on the Bend in Austin venison stew is my favorite recipe.

Raising my three boys in the early 80's when jobs were nearly impossible to find, we ate deer meat. If we wanted meat at all. The first meal was always fried heart and liver. My wife made some of the best meals out of "scraps". I'm heart broken when I see how folks waste all that stuff. The cuts people think they just can't eat, can it in the pressure cooker and it's like butter.

Oh no, we save the rib sides up here in WI! Season them up with cold mountain rub (gonna try the 2 step next time). Throw them on a low and slow charcoal bed grill with some hickory or oak Harwood smoke. That's money meow!
